You have been asked to prepare rosters for The Righteous Inn for their Main bar, Bistro, Gaming Room and Bottle Shop for the next three roster periods. The Righteous Inn operates using a one-week roster period, meaning you are to write rosters for the next three weeks for each of the above operational areas of the hotel.
You hold a current RCG, RSA and food handler’s certificate. Management have given you the following information to work with:

Trading hours
Main bar: 10am – 10pm, 7 days-a-week.
Bistro: Noon – 3 pm and 6pm – 9pm, 7 days-a-week.
Gaming Room: 10am – 10pm, 7 days-a-week.
Bottle Shop: 10am – 10pm, 7 days-a-week.

Levels of trade align with traditional industry patterns – that is:
Monday, Tuesday and Wednesday are the quietest days.
Thursday, Friday and Saturday are the busiest days.
Sundays are in between.
10am to noon and 2pm to 4pm is relatively quiet every day all week.
Noon to 2pm and 4pm to 8pm are the busiest times every day all week.
Thursday, Friday and Saturday stay busy to 10pm.
The Gaming Room is constant all day, every day.

Service information
The Righteous Inn wants to create a ‘point of difference’ in terms of its speed of service which is why
it has allocated labour cost percentages slightly higher than normal – they want to reduce or eliminate
waiting times at peak periods.

The clientele has been analysed and found to comprise:
60% female, 40 male.
25% below 35 years of age, 75% 35 years and above.
80% Australian locals with overseas visitors as follows 10% Chinese, 5% Indian, 5% United Kingdom.
